From My Pretty Garden

Here is some of our bountiful harvest.  We are eating lots of zucchini bread (and sharing with friends), lots of homemade salsa and I made some super awesome homemade pasta sauce last weekend and an even more tasty cream of tomato soup.  Thank you Food Network!  From one of my last Bountiful Basket purchases I got 25 pounds of carrots.  After sharing some of those with numerous neighbors,  I spent a lovely afternoon with my new best friend, my Cuisinart, shredding and slicing enough carrots and zucchini for Texas.  Then I made carrot muffins and a carrot cake for our neighbor who retired.  We have also harvested some yellow squash but that has not done so well this year.  We had some great onions the end of May and are hoping for some more peppers but they have been really slow.  Last weekend I also bottled 4 quarts of tomatoes-but lost one. Our systems should start shutting down any time now from a veggie overdose.

Haha! You'll have to share your recipes... I'm excited for our garden to start producing and I'm going to have a boat load of tomatoes so I need some recipes to use them up.
